Shrove Tuesday & Pancake Recipe

 Happy Pancake Day!
Shrove Tuesday (or Pancake Day as it is affectionately known) calls for the delicious overindulgence of pancakes before the austerity of Lent, which begins tomorrow.  I have not yet decided what I will be giving up for the forty days and forty nights. The usual suspects are chocolate, alcohol and desserts. It will probably be one of these, but I can think about that later. Right now there are pancakes to enjoy! 
  Pancakes 
 
Yields Approximately 6 pancakes
 
1 Large Free Range Egg, Beaten
280ml/1¼ cups Semi-Skimmed Milk
 Pinch of Salt 
110g/1 cup Plain Flour 
To grease your frying pan mix 1 tbsp Melted Butter and 1 tbsp Vegetable Oil together
 
Sift the flour into a bowl, add the salt and make a well in the centre
Add the egg and a large splash of milk, using a whisk gently incorporate until the batter is smooth and creamy
Add the rest of the milk and leave to rest for 30 minutes in the fridge 
 
After 30 minutes remove the batter from the fridge and heat your frying pan
Using a silicone pastry brush, brush the inside of the pan with the oil and butter mixture 
Add a ladle of batter and swirl the pan so that it coats the base
Cook on a medium heat until the base is golden brown and then turn or flip (depending on your bravery!) to cook the other side
Serve immediately with your favourite topping or filling

Nathan's favourite is the classic lemon juice and caster sugar
 My favourite is the ridiculously over the top Nutella, banana and a drop of cream

  2. Happy Pancake Day my dear!!!!!!!!!! It all looks scrumptious; however, I have never known them to be covered with lemon and sugar!!! Maybe I shall try it!! Go Nathan!!

  3. Oh Morwenna, your pancakes look gorgeous! My favourite topping for pancakes is butter and syrup. I would love to try the lemon sugar one day. Of course, your nutella/banana one looks scrumptious as well! I will have to follow your recipe one of these days. Thank you for sharing it with us! xoxo

  6. Oh wow your crepes look fantastic. It's one of my flaws that I'm a purist and enjoy things mostly plain so my choice is butter and sugar on crepes. Pancakes I sometimes use syrup (not a real fave, too sweet) but I'm ok with butter and powdered sugar on them as on waffles. Tho crepes with strawberries and whipped cream are great too and let's face it Nutella is good on anything at all.

  8. ooh, they look good. I love lemon & sugar. I didn't make any this year. I am not good at pancakes at all, they always turn out looking (and tasting) like car tyres. I've given up!

    Love your sunshiney pictures. pretty. The sun came out here today, but your pics are far brighter and happier than the real thing :O)
